The
restaurant Panela de Barro
(Clay Pot) is a cultural cauldron that
surpasses mere gastronomy. The signature
dish is the famous Moqueca Capixaba,
a chowder-like delicacy that burst forth
from the state of Espírito Santo
and conquered the world.
The
stew is prepared and served in clay
bowls crafted in the traditional manner
by Vitória’s potters. The
absence of coconut milk and red palm
oil distinguish Moqueca Capixaba from
the Bahian version of this chowder,
and its reddish hue derives from the
irresistible ground seed of urucum. |
